This black IPA recipe has been coined the name as 'Diablo Dark Ale' in honor of our resident Mt. Diablo. Here is where the Diablo Order of Zymurical Enthusiasts brew at the foothills fine tuning their homebrew recipes and sharing their passion for making great beer at home. After winning the AHA Homebrew Club Of The Year in 2010, the Diablo Order Of Zymiracle Enthusiasts (DOZE) put their minds together to collectively craft a beer they felt representative of the club and its brewers. The initiative was taken on as an all club project that spanned 5 months. In the end, over 50 members contributed ideas to this recipe and nearly 40 individual batches brewed by 23 DOZE members were tasted and refined to a single recipe. This beer is inspired by the style many refer to as Cascadian Dark Ale or Black IPA, however it is not intended to fit the mold of any particular guideline. Left Coast Pale Ale by Phil Montalbano | 5 Gallon Beer Recipe Kit | All-Grain
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! Enjoy the citrus/orange hop character Amarillo® hops impart on to this thirst-quenching Pale Ale Includes 100% Amarillo® hops Estimated ABV: 5.3% Estimated IBUs: 50-55 Makes 5 gallons of finished beer Phil created this recipe in an effort to stop his long, slow spiral into fruity, phenolic, sour beers that began to populate his fermenters and kegs back in 1998. Honestly, Phil seriously contemplated throwing gummy bears into his brew and realized it was time to step back, look around, sober up, and grab a classic West Coast pale ale. This beer is dominated by the wonderful Amarillo® hop that is known for having a citrus/orange flavor. The Left Coast Pale has been brewed many times over as a house favorite during the Fermentation Frenzy shop era (Los Altos, CA circa 1997-2007). Try it, you'll like it. And, unfortunately, so will your friends. Phil recommends for an even more pronounced hop nose and flavor you add an additional 1oz of Amarillo® hops to the fermenter as a dry hop addition (not included with kit). Makes 5 gallons Estimated Original Gravity: 1.050-55 SRM (Color Range): 12 IBUs: 50-55 Estimated Alcohol Percentage: 5.0-5.5% Our recipe kits DO NOT include grain bags, yeast or priming sugar. Dusseldorf Alt Bier by Ryan Barto | 5 Gallon Beer Recipe Kit | All-Grain
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! A malt-forward German ale with a sturdy bitterness Includes Magnum, Saaz, and Mt. Hood hops Estimated ABV: 5% Estimated IBUs: 34-38 Makes 5 gallons of finished beer "Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a step mash. He likes to dough-in at 130F for a 15 minute Protein Rest, and then raise to sacharification rest of 154F for 60 minutes before mashing out at 168F. He likes a 45-60 minute sparge with 170F liquor. You may need to collect more wort than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost! Skyscraper Brewing Company Bulldozer Honeyweizen® | 5 Gallon Beer Recipe Kit | All-Grain
This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Skyscraper Brewing Company A delicious wheat beer with a pleasant honey sweetness Includes Willamette and Saaz hops Estimated ABV: 4.7% Estimated IBUs: 21-26 Makes 5 gallons of finished beer Phil Sutton, owner and head brewer at Skyscraper Brewing Company, was in our local homebrew club, D.O.Z.E. After taking the American Brewers Guild program, he realized brewing was what he wanted to do, and left NorCal to head down south and open up Skyscraper. Phil says, "I started out, like everyone, as a homebrewer. Living in Salt Lake City in 1999, I got sick of paying $13 for a six pack of Sam Adams, and some homebrewer friends got me started with my first batch, a hybrid Bohemian Pilsner that was fantastic! When I got sick of my job writing software, I attended the American Brewers Guild program, worked for BJ's for a year, and then struck out on my own." Most of you have probably already seen the brewery in a certain cellular phone ad, where two guys are trying to sell beer - the guy on the forklift was Phil himself! His Bulldozer Hefe is Phil's flagship beer, and he was kind enough to let us in on the recipe. Next time you are in Southern California, be sure to put Skyscraper on your list of must-visits! Stone Brewing 12th Anniversary Bitter Chocolate Stout | 5 Gallon Beer Recipe Kit | All-Grain
This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Stone Brewing Company A huge oatmeal stout that draws bitterness from cacao nibs added to the kettle in addition to hops Includes a single addition of Willamette hops Estimated ABV: 9.4% Estimated IBUs: 45-48 Makes 5 gallons of finished beer Founded in 1996, Stone Brewing Co. has unleashed a demand for over-the-top beers. Their flagship, Arrogant Bastard Ale, challenged us to pick up a bottle and drink it, kicking off a cult-like following of the beer and the brewery. For their 12th Anniversary, Head Brewer Mitch Steele and the Stone Brew Crew worked with homebrew recipes from Brewhouse Supervisor Jeremy Moynier and Distribution Supervisor Jake Ratzke to create this huge oatmeal stout, but instead of relying on just hops for the bitterness he added some cacao to the boil kettle. The result is simply amazing! We first had this beer at the shop and thought, "We have to have this recipe"! Mitch and Greg must have felt the same way about this beer that we did and handed it over. Stone Brewing Co. is located in Escondido, Ca, so next time you are in Southern California, make it a point to stop by. They have a fantastic restaurant as well, using locally-grown food and a focus on quality. Mia Wallace Maibock by Gary Glass | 5 Gallon Beer Recipe Kit | All-Grain
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! Paler in color and more hop-forward than a traditional bock Includes Magnum and Saaz hops Estimated ABV: 6.7% Estimated IBUs: 54-58 Makes 5 gallons of finished beer Gary Glass started homebrewing in 1992, shortly after tasting his first homebrew while attending while attending college at Cal Poly, San Luis Obispo. Gary brews on a home-built HERMS system, and he?s never brewed the same recipe twice and can't brew any recipe without some kind of tweaking. Gary is a BJCP judge who has judge in many competitions including the World Beer Cup and the Great American Beer Festival. Gary holds a Masters Degree in American Diplomacy from the University of Colorado at Boulder. When not homebrewing, he enjoys fly fishing, hiking, and backpacking in the Rocky Mountains. He's also into gardening (his Cascades finally produced a good crop this year!), home improvement projects, and building furniture. Gary lives in Longmont, Colorado with his wife Erin, who fully supports his brewing habit, bought him a conical fermenter and is encouraging him to install taps in their family room. He knows you are jealous. Gary is looking forward to teaching his daughter, who is due in November, to brew someday. Gary enlightens us on how to authentically brew his beer: "This recipe can be brewed as either a Maibock or a Belgian strong ale. The beer was originally brewed as a 10.5 gallon batch split into two carboys with yeast slurry from previously brewed pilsner. To accurately recreate the Belgian strong ale, one should accidentally pour hot wort (due to user error with a counter-flow chiller) onto lager yeast slurry, being sure to thoroughly cook the yeast. Chill, then pitch a vial of Belgian ale yeast. The Maibock came out great, the Belgian strong even better. Of course, if you don't feel like attempting to cook yeast to make this beer, a nice big starter of Belgian ale yeast should do the trick." Sounds great to us! Makes 5 gallons Estimated Original Gravity: 1.067-73 SRM (Color Range): 7 IBUs: 54-58 Estimated Alcohol Percentage: 6.7% Our recipe kits DO NOT include grain bags, yeast or priming sugar. Father-In-Law Pilsner by Charlie "Push Eject" Essers | 5 Gallon Beer Recipe Kit | All-Grain
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! Sweeter than a standard pilsner, but still crisp and refreshing. Guaranteed to satisfy the in-laws Includes 100% Saaz hops Estimated ABV: 4.3% Estimated IBUs: 35-39 Makes 5 gallons of finished beer Charlie Essers (AKA Push Eject) has been a longtime friend of MoreBeer, The Brewing Network, and homebrewers in general. Dubbed "one of the nicest guys in homebrewing" by those who know him, Push wanted us to have this recipe that he brews whenever his father-in-law comes for a visit. Push says: "My family has been supportive of all the brewing gadgets and scattered projects including my "dark-beer-phobic" father-in-law. This recipe is an Americanized pilsner that I have evolved for him over the years. Sweeter than a standard pilsner, but still crisp and refreshing, I can't keep this around long in the Summer months." Push began brewing in 1999 after buying a starter homebrew kit as a bad joke for a friend who earned a DUI and getting one for himself as well on impulse at the register. After going all grain in 2002, it was clear that automation was a necessity in his process, and his love of brewing gadgets was born. His first stand was designed and built in 2003 and his first Wort-O-Matic control panel in 2006. These led to the launch of wortomatic.com and a close relationship with MoreBeer! and The Brewing Network. Try Push's beer out and let him know what you think - Hopefully it keeps your father-in-law happy, too! His Assistant brewer Jesse created this beer, an easy-drinking pale ale with few bittering hops but giant fistfuls of flavor and aroma hops. This beer has low alcohol and a soft malt backbone with an incredible hop finish - your answer to the hop shortage! Jesse and Shaun recommend using WLP001. Shaun O'Sullivan of the 21st Amendment, San Francisco, California Shaun's brewing career started like most in the beer industry - homebrewing. After about 2 years, he not only decided that he wanted to make beer for a living, but that he wanted to open his own place! Shaun moved up to the SF Bay Area to start working at a few local breweries, while taking several brewing courses at UC Davis. Shaun eventually teamed up with his business partner Nicco Freccia, and together, they founded the 21st Amendment Brewery and Restaurant. They are one of the few breweries in the country leading the craft beer canning revolution, canning their "Brew Free or Die" IPA, and their "Hell or High Watermelon", which is an American-style Wheat beer brewed with real watermelon juice. Biere de Garde | 5 Gallon Beer Recipe Kit | All-Grain
Highly drinkable, malt-forward beer with a slight toasty nose from Munich malt Includes Northern Brewer hops Estimated ABV: 8% Estimated IBUs: 19-22 Makes 5 gallons of finished beer The "Original Gatoraid", Bière de Garde was said to give the French and Belgian farmer a much needed boost of energy during the day, due to the low alcohol and relatively high residual sugar content. Our version has a bit more malt than tradition dictates, but we think you will find this beer highly drinkable. The malt is the focus of this style of beer, with a slight toasty nose from the Munich. A yeasty character is not uncommon, and is achieved by an extended period of contact with the yeast bed – some commercial breweries go for up to six weeks! This should be fermented at 64°F. Makes 5 gallons Estimated Original Gravity: 1.080-84 SRM (Color Range): 15 IBUs: 19-22 Estimated Alcohol Percentage: 8% Our recipe kits DO NOT include grain bags, yeast or priming sugar. Flanders Red Ale | 5 Gallon Beer Recipe Kit | All-Grain
Deep red in color with a nice malt structure and distinct sour overtones. Requires a two-step fermentation process Includes Magnum and British Kent Goldings hops Estimated ABV: 6% Estimated IBUs: 16-18 Makes 5 gallons of finished beer Our Flander's Red recipe creates a beer that is deep red in color with a nice malt structure, this beer is based on those from certain regions of Belgium, and have distinct sour overtones to them. This is due to the wild spores that inhabit the air - and some breweries - of the area. While this would normally be a "bad" thing, the infection lends special tart and sour qualities unlike any other beer can. For a more traditional spin on this kit, try aging it on some oak cubes! We recommend fermenting this beer with WLP001 California Ale for two weeks. Then add Wyeast 3763 Roeselare Belgian Sour Blend in the secondary fermenter bucket. This kit does require some special instructions, as it is a special beer. Once the gravity hits 1.015 - 1.020, rack the beer into a plastic bucket and pitch the sour blend tube. Age the beer at 65F-70F for 6 months, until the white cap that will form drops. The reason for the plastic bucket aging is so that tiny amounts of oxygen are allowed to be taken in by the plastic and come in contact with the beer. This micro-oxidation adds to the over all flavor of the beer itself. Reminder: you will need to keep the equipment used to handle the beer after the sour blend is introduced separated from the rest of your brewing equipment, or clean and sanitize very well after use. Makes 5 gallons Estimated Original Gravity: 1.062-66 SRM (Color Range): 16-18 IBUs: 18-22 Estimated Alcohol Percentage: 6% Our recipe kits DO NOT include grain bags, yeast or priming sugar. To find our yeast recommendations, choose your preferred kit option above and then select the drop-down menu under “Yeast Options”. Snowflake Smoked Porter by Ray Daniels | 5 Gallon Beer Recipe Kit | All-Grain
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! This incredibly unique recipe leans on a smoky quality that was once a staple of old-world English porters Includes Northern Brewer and Kent Goldings hops Estimated ABV: 5.4% Estimated IBUs: 28-34 Makes 5 gallons of finished beer This beer combines the richness of black malt with the old-world smokiness of Bamberg: a Franconian village that is at once worldly and yet devoted to its traditional ways. Brewed with an ale yeast, it mimics the origins of English porter, a beer made solely from brown malts dried over a direct wood fire. And since you'll never find a beer like this at your local liquor store, you'll have to brew it to appreciate the flavorful treats it can offer. With an astounding Two Pounds of Rauch Malt, any fan of smoked beers will fall in love with Ray's beer! Ray recommends British Ale yeast, WLP005. Ray began brewing in 1989 after seeing a homebrew store ad at a Chicago hamburger shack. "The first batch was pretty good," he says, "but the second one was awful. Fortunately, I had already brewed the third batch before tasting the second, or that might have been the end of things. After tasting that beer, there was no looking back: I dove headlong into brewing and tasting and learning as much as I could about the art of brewing." That informaton was put together in his book, "Designing Great Beers", which has since become a must-have for any serious brewer. Over the years he has brewed more than 200 batches. When he started all-grain brewing in 1990 there weren't many options for buying mashing equipment, so he made his own 10-gallon vertical Coleman cooler Mashtun. More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment--although now the mash tun has been retired after some unsuccessful modifications a few years back. Ray has been a long time friend of MoreBeer! and is currently running the Beer Cicerone program. Makes 5 gallons Estimated Original Gravity: 1.054-58 SRM (Color Range): 18-19 IBUs: 28-34 Estimated Alcohol Percentage: 5.4% Our recipe kits DO NOT include grain bags, yeast or priming sugar. Since then he has been keeping the awards and praises rolling into Drakes with their flagship IPA, which took Gold in 2002 at the Great American Beer Festival. Drakes Brewing has been around since 1989, and is one of the San Francisco Bay Area's oldest breweries. Their attention to detail and their commitment to making great beer is evident in each batch that rolls out of the brewery. Definitely another 'must' for any beer fan visiting the Bay Area. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001. Firestone Walker Brewing Company Double Barrel Ale® | 5 Gallon Beer Recipe Kit | All-Grain
This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Firestone Walker Brewing Company A smooth amber ale with subtle oak notes blending perfectly with wonderful malt character Includes Willamette and Kent Goldings hops Estimated ABV: 5% Estimated IBUs: 32-34 Makes 5 gallons of finished beer Matt Brynildson of Firestone Walker Brewing Co., Paso Robles, California. It seems to some that Matt has almost been bred to brew beer. After getting a degree in chemistry in 1993, Matt went to work in Michigan doing research and development on hops for the brewing industry. In 1995, Matt went to the famous Seibel Institute of Brewing Technology to further his education. After brewing for Goose Island in Chicago and then moving to California to work for SLO Brewing, Matt was appointed Small Brewmaster of the Year in 2001. Later that year, he was asked to join the crew at Firestone Walker. Two years later Matt was dubbed Mid-Sized Brewer of the Year at the Great American Beer Fest AND at the World Cup of Beer, for a total of 12 medals in just three years! Since then, Firestone Walker has been gaining a large following in California due in part to it's flagship beer, Double Barrel Ale, which is produced in a Burton Union system that has the beer fermenting in barrels. Firestone Walker Brewing Company is the only brewery in the U.S. to ferment in barrels and one of only two in the world. In addition to the line-up at Firestone Walker, Matt also brews the Nectar Ales line of beers, as well as a few of the Trader Joe's house brands. Learn more at www.firestonebeer.com Don't let the name fool you, this beer is easy on the oak, having been created so that all ingredients blend perfectly with one another, even the oak. In fact, the oak really takes a back seat to the wonderful malt characteristics that this beer presents, which may be hard to imagine once you realize there are 2 ounces of oak in this one! A blend of American and English base malts provide the foundation for this beer. A little Munich, some crystal, and that's it - simple, yet flavorful. Just how we like it. One can easily spend all night drinking this smooth amber ale ... in fact, many of us at MoreBeer! have done just that! The low bitterness ties everything together and makes you remember just how much of a craft brew this beer really is.
