Barrel Oxyfresh is great for cleaning out oak barrels or breaking in new barrels. It is much safer and easier to work with than soda ash. Formulated especially for commercial and home wineries. Directions: Fill barrel halfway with cold water and dissolve 0.2 - 0.6 oz. per gallon of barrel capacity. Agitate to dissolve the product, then top with cold water and loosely bung barrel. Allow barrel to soak for 24 hours prior to draining and rinsing. Cleans with oxygen; does not contain chlorine, bisulfites, organic compounds or phosphates.

Our version of the cellar keg has a couple unique twists, designed after using most others on the market. We start with a brand new 50 Liter Stainless Steel Keg. We cut out the original valve and weld in a 4" tri-clamp ferrule. Some winemakers have told us they do not need the 4" opening. However, the cost difference between a keg with a 2" or 4" opening is very little, and boy is the 4" opening nice when you want to clean it quick by hand. The larger opening also comes in handy for small producers who may need to add oak staves into a cellar keg for structuring. A unique feature of our Cellar Keg is the 1.5" tri-clamp wine-out connection positioned at a 90 degree angle to the keg. These stainless steel vessels are designed just like a keg but with a large 4" tri-clamp opening at the top and two 2" tri-clamps ports at the bottom. The large 4" opening at the top makes it easy to get inside the keg for cleaning, and the 2" ports at the bottom can be fitted with valves, heating elements, or other TC accessories and fittings. The kegmenter is well suited for use as a fermenter, brite tank, or top-up barrel. Wine barrels safe-guard the main asset of a winery – the wine itself. The wooden walls of dry, non-humidified barrels will draw liquid from inside it up through the small crevices to the outer surface where it evaporates. Over time, this leads to a significant amount of product loss. For example, a 225L wine barrel can lose 10-15% of the wine volume over one year. A professional humidification of the barrel room allows the barrel wood to absorb water-vapor, the crevices fill out and loss of wine is prevented. A well-kept barrel room is therefore cool, usually around 57-60°F and humidified at about 75% - 80% rH. As with every aspect of winemaking, attention and professional equipment are required. Low humidification may allow the wood to dehydrate and wine will evaporate through it, while overly high humidity can lead to mold and fungus.
