This effect is particularly noticeable in light‑ to medium‑bodied reds or in vintages with lower phenolic maturity. Protocol Suspend the recommended dose in 10× its weight of clean must or water. Stir thoroughly to ensure full dispersion, then add at one of these points: • At the beginning of maceration or alcoholic fermentation for enhanced color protection and tannin integration • Toward the end of fermentation to smooth out persistent harshness without affecting initial extraction. Usage Rates Recommended dosage: 20–40 g per hectoliter = 0.2–0.4 g per liter = 0.76–1.5 g per gallon For standard use, 30 g/hL (0.3 g/L or ~1.14 g/gal) provides excellent balance between color enhancement and mouthfeel refinement. For home users a rough approximate of weight is 1 tsp = 2.6 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.

Based on the activity of a blend of cellulases, hemicellulases, and pectinases, this preparation aids in the extraction, then stabilization of water soluble phenols found in cells of grape skins. A dry, granular product requiring no special storage conditions prior to use. We have used this enzyme on our wine here at MoreWine and found the difference to be nothing short of amazing. To use dissolve Lallzyme EX into a sufficient amount of water (usual ration is 1:100) and add to must with your other additions prior to the onset of fermentation. Malic acid is the acid found in apples and is therefore the best choice for adjusting ciders. Malic is less sour than tartaric acid and can also be used to make acid adjustments in Rieslings, Gewurztraminer, and Muscat varieties, though many winemakers still prefer to use tartaric acid in these situations. You would not want to add Malic acid to any wine that will undergo a malolactic fermentation. As a note: only half of the artificially added malic acid will convert to lactic acid during a malolactic fermentation. A rough approximate of weight is 1 tsp = 2.7 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.

A heat soluble, commercial quallity extra no. 1 grade, powered Gelaitin. This is much higher quality Gelatin than you will find in most beer/winemaking shops. It is composed of high molecular weight mass proteins that carry a big positive charge. Prepare by mixing in warm water and then adding during a transfer or pump-over. The solution must be maintained at 95-104F (35-40C) when used. See below for different dosage rates for beer and wine. For Wine Gelatin will help to reduce cloudiness by removing colloidal substances. It has an overall tannin polishing effect, but still preserves the phenolic compounds responsible for structure (similar to fining with egg whites). Add at the rate of .2 to .35 grams per gallon. Maximum clarification and filter-ability achieved after one week. If you will be ageing the the wine, a second racking one week after the first racking is recommended. Use the OxyWand™ to infuse oxygen into your must during the start of fermentation to feed yeast and to reduce volatile sulfur compounds (VSC's) with a process called Macro Oxygenation. It is actually very easy to do. Insert the wand, turn on oxygen, and leave it on only while you punch the cap. After three days or when your wine has reached 10% alcohol stop oxygenating. Yeast use the oxygen as a nutrient to produce healthy cell walls which helps to eliminate issues throughout fermentation. Healthy yeast also produce better flavors and produce less Volatile Sulfur Compounds. You can also actually smell the must become fresher and more fruity while oxygenating as VSC's are driven off. Note that in styles like Syrah and Sauvignon Blanc where sulfur compounds are part of the flavor profile you would want to reduce the amount of Macro Oxygenation in frequency and/or duration. The top of the lid has a "gas in" ball lock body connect welded in place that works with the KEG710 and KEG730 gas quick disconnects. Use: Beer must be stored cold at 34–40°F. Preboil the stone for 2–3 minutes before using. This assures you that your stone is sterile and any residual oils have been boiled off. Sanitize the whole keg lid before submersing into your keg filled with beer. Set your PSI on your regulator to 3–4psi and attach your gas in fitting to the body connect on the lid. Leave keg at this pressure for 1 hour. Raise your pressure 2PSI per hour until you reach 10–12psi. Leave it at 10–12psi for 24 hours. Pour a pint and test the carbonation. If you think your beer needs more CO2 leave for another 4–6 hours and have another pint. Remove carbonation lid after carbonation level is satisfactory. Return original keg lid for long term storage.
