    Cane Sugar, or Sucrose, is made of one glucose molecule and one fructose molecule bonded together. Commonly used for chaptalization (adding sugar to increase alcohol potential).  Yeast cannot ferment sucrose directly. It first secretes an enzyme (invertase) that splits sucrose into glucose and fructose before uptake.
