    Russian River Brewing Company Consecration Sour Dark Ale | 5 Gallon Beer Recipe Kit | All-Grain

    This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Russian River Brewing Company This sour dark ale recipe features an addition of oak chunks broken down from actual Consecration barrels Includes Styrian Goldings and Sterling hops Estimated ABV: 9.5% Estimated IBUs: 15-18 Makes 5 gallons of finished beer Beer lovers rejoice! Vinnie from Russian River Brewing Co. has released his Consecration recipe to us, and we're very proud to be able to offer it to the homebrewing community. Consecration is a sour dark ale aged in a Cabernet Sauvignon barrel. It is aged for 4 to 8 months with currants and brettanomyces. You can look for rich flavors of chocolate truffle, spice, tobacco, currants, and a bit of Cabernet. Something that makes this kit different and more exciting than any others that we offer is the secret ingredient: Authentic oak chunk(s) from actual Consecration barrels! We will also include two pounds of currants to replicate the original recipe as much as possible. *NOTE* The dried currants and oak chunk(s) should be stored in a cool dark place until ready to be used. Vinnie recommends fermenting down to around a 1.016-1.018 with Abbey Ale yeast. He recommends the temperature to be 72°F during the first few days of fermentation, and then lets it free rise to 76°F until the target gravity of 1.016 is reached. After hitting this target gravity, he'll transfer to barrels to start the aging and souring process (a secondary fermenter will be necessary - a barrel would be preferred!) Currants and Brettanomyces are added at this point. After approximately 7-8 weeks, you'll want to add your Lactobacillus and Pediococcus. To kill two birds with one stone, we recommend pitching Roeselare (WY3763) which contains both bacterium. The souring process can take anywhere from four to twelve months. Once the desired sourness level is achieved, you'll want to add the Consecration barrel oak chunk(s) until desired oak character is achieved. Vinnie uses Belgian bottles when bottling Consecration, and bottle conditions using wine yeast. He mentions that he'll never bottle if the gravity is over 1.008. We will not always have access to Vinnie's Consecration barrels (and would not substitute the oak cubes with anything other than the real deal), so kit availability will be limited. Maier of Rogue Brewing Company, Newport Oregon has been an avid homebrewer since 1982. In the Fall of 1986, he decided to turn his passion into a job and attended the Siebel Institute of Technology, graduating from their 50th course in Brewing Technology. The Alaskan Brewery in Juneau hired John as Assistant BrewMaster in March of 1987. In 1988 he won the prestigious American Homebrewer's Association Homebrewer of the Year award. It has the malt, alcohol and hoppiness of an IPA but the bitterness of a Pale Ale. Frank started with our American Pale Ale II, KIT250 – but this wasn’t enough flavor for Frank. So he added one pound of malt extract, more finish hops, followed by... yet more finish hops!     Belgian Ale will give you a full roundup of phenolic, fruity, clove, plum, and banana flavors Includes Perle and Saaz hops Estimated ABV: 5% Estimated IBUs: 32 Makes 5 gallons of finished beer Belgian ales are really about creating a simple yet elegant malt base upon which the unique Belgian yeast strains can create their wonderful, complex flavors. This Belgian Ale is their equivalent of our pale ale in alcoholic strength and body. The difference is that the hops are very subdued and only complimentary where as in many American beers hops can create a majority of the flavor profile. One is not better than the other just different, and we love diversity in beer. Terms used to describe Belgian Ales include phenolic, fruity, with the occasional clove, plum, and banana flavors coming through. Sometimes you just have to try one to understand. In the Dubble and Triple you will have some higher alcohol flavors coming through. This version is less alcoholic and highly drinkable. Any of the four Belgian yeast strains that we carry from Whitelabs could be used in any of the Belgian recipes. They are all excellent in their own right. The malt extract for this kit is made entirely from our German Pilsner Malt, giving it authentic European flavor. We use turbinado sugar to help up the alcohol and dry out the beer during fermentation.
