Liquid Malt Extract (LME) vs. Dried Malt Extract (DME) MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

Blue Agave Syrup
This sticky, sweet nectar of the Agave plant is a fantastic way to experiment with different flavors in your meads and beers. It has a malty aroma with a hint of sweetness to it. One of the great things about Agave Extract is that it won't crystalize like honey will, so it maintains a smooth, liquid-like consistency. Notes of molasses come out when tasting it. The extract is light in color, and in addition to being fermented, many people use Agave extract as a sweetener in foods. And due to its low glycemic index, it is a great alternative to sugar for diabetics. Organic, non-GMO, and allergen-free.

Blue Juniper Berries (Whole)
Common juniper is a small evergreen tree that is related to cedar, cypress and other conifers. The mature, dark-colored cones, or berries, are used to lend a slightly citrus and pine-like flavor to foods and beverages. In Northern Europe, juniper berries are used as a spice to season game meats and sauerkraut, as well as beer. The berries are also the key flavoring agent in gin. Available in 1 oz and 16 oz bags.

Blue Oxygen Absorbing Bottle Caps
These Oxygen Absorbing beer bottle caps have a special liner that absorbs oxygen in the bottle's head space. This helps reduce the oxidation that happens during the bottling process, keeps your home brewed beer tasting fresher, and can extend it's shelf life. Important to note: It is recommended that you only sanitize as many caps as you'll require at the time of bottling. The oxygen-absorbing agent is activated when the cap gets wet. If wetted caps are saved for later use, they'll still function as a normal cap, but the oxygen absorbing agent may be depleted.

BM 4X4 Dry Wine Yeast
BM 4x4 is a new yeast blend created by Lallemand, designed to provide all of the benefits and flavors of the BM45 yeast strain, along with a much more reliable and consistent fermentation. This means that you'll be getting all of the flavors of jam, rose petals, and cherry liquor with a stronger fermentation with less risk of a stuck or sluggish fermentation. This is a blend between the traditional BM45 and a complimentary strain, chosen for its fermentation kinetics. Positive interaction between these strains means a more dependable fermentation, along with increased aromatic intensity, color intensity, and length of finish. Ideal fermentation temperature is between 64-82°F. This strain will enhance varietal character, and mouthfeel in a wine. Alcohol tolerance is 15%. BM45 Brunello Dry Wine Yeast
Italian isolate that is recommended primarily for Sangiovese and extended maceration wines. A slow starter and moderate fermenter, BM45 has high nutritional needs and therefore should be used in conjunction with Go-Ferm (AD342) and Fermaid K (AD345) in order to minimize H2S production. BM45 contributes higher acidity, low astringency, and due to its' high levels of polysaccharide production, resultant wines have great mouthfeel and improved color stability. In addition, it can also be used to minimize vegetal characteristics that may be present in the fruit. In red wines, BM45 brings out aromas described as fruit jams, rose petals and cherry liqueur, with notes of sweet spices, licorice and cedar. While this makes it perfect for creating traditional Italian wine styles, BM45 also excels in Cabernet Sauvignon. When making white wines, some producers use this yeast on Chardonnay as a blending component to increase mouthfeel, but care for proper nutrients must be taken. It should be noted that BM45 may produce a "gamey" quality immediately post alcoholic fermentation, that will age out in about 6 months. Best results from 64 to 82 degrees F, with an alcohol tolerance up to 16%. Click here for a PDF of the MoreWine Manual on re-hydrating wine yeast.
