Scotch Ale | 5 Gallon Beer Recipe Kit | Extract
An extremely malty beer that really emphasizes malt over hops Includes a single addition of Northern Brewer hops Estimated ABV: 8% Estimated IBUs: 19-23 Makes 5 gallons of finished beer An extremely malty beer that really emphasizes malt over hops. This recipe has over 11 lbs of malt extract and only one ounce of hops! Sour Belgian Blonde | 5 Gallon Beer Recipe Kit | Extract
A classic lambic that is as mild or as wild as you make it. Requires a two-step fermentation process Includes Hallertau hops Estimated ABV: 6.5% Estimated IBUs: 7-10 Makes 5 gallons of finished beer Brewed for the first time in 2010 in our parking lot at the annual July 15th Showroom Sale, we decided to experiment with another sour. This Belgian Style Blonde, destined for a Brettanomyces fermentation was born! On a whim, the boys decided to have fun with it and add 1lb of California Golden Raisins per 5 gallons with the second dose of Brettanomyces. The sugars in the raisins ferment out completely and seem to be an excellent source of food for our ‘lil wild buddy's. The end result: A classic lambic that is as mild or as wild as you make it! This is a great base recipe for a Belgian Style Blonde Ale. Great body and mouthfeel balanced with a funky delicious sour edge. So have fun with this Lambic Recipe and make it your own! Tip: Patience, patience, patience. If brewing All-Grain, try mashing higher for some added body. (We recommend 156F.) Brettanomyces loves oxygen just as much, or maybe more than Saccharomyces spread the love! Use restraint with these critters, don’t add the whole kitchen sink. Experiment with one to two cultures per batch, at intervals, and preferably with a small amount of a new food source. Patience. CA Golden Raisins are an excellent food source! (ahem, hint hint!) Don’t disturb the fermentation vessel while the pellicle is formed. The pellicle provides protection from excessive oxidation over the long aging time. Patience. Use excellent sanitary methods when working with our wild lil buddy’s to ensure a clean brewhouse. Try adding any local fruit as a food source for the bugs and wild yeasts. They love it! Patience! Makes 5 gallons Estimated Original Gravity: 1.060-65 SRM (Color Range): 4-6 IBUs: 7-10 Estimated Alcohol Percentage: 6.5% Please Note: Kit does not include raisins. We recommend California Golden Raisins. Our recipe kits DO NOT include grain bags, yeast or priming sugar. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

Mike is one of the best homebrewers we’ve ever known, and one of our original customers way back when the entire MoreBeer! operation fit inside a storage shed. Aside from brewing many award-winning beers, Tasty helped grow homebrewing as a hobby, and as a community, here in the Bay Area and well beyond. For many years you could walk outside our Concord showroom on a Friday afternoon and see Mike with the tail gate down on his Four Runner a 2.5 gallon keg in hand. We miss those special times. Janet’s Brown Ale is the recipe for which Mike won the 2004 National Homebrew Convention gold medal in its category. He once told us the most important critique he ever received was from his late wife, Janet. She really loved this brown ale and it was her favorite of all Mike’s creations. When you’re done brewing this beer, we ask that you raise a glass and toast to the memory of Janet and Mike McDole. Black IPA by DOZE | 5 Gallon Beer Recipe Kit | Extract
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! Big, dark, hoppy, and delicious. Designed by our local homebrew club in Concord, CA—the Diablo Order Of Zymiracle Enthusiasts Includes Magnum, Cascade, Centennial, and Simcoe® hops Estimated ABV: 6.5% Estimated IBUs: 70-75 Makes 5 gallons of finished beer MoreBeer! is proud to release this Black IPA recipe designed by our local homebrew Club D.O.Z.E. After winning the AHA Homebrew Club Of The Year in 2010, the Diablo Order Of Zymiracle Enthusiasts (DOZE) put their minds together to collectively craft a beer they felt representative of the club and its brewers. The initiative was taken on as an all club project that spanned 5 months. In the end, over 50 members contributed ideas to this recipe and nearly 40 individual batches brewed by 23 DOZE members were tasted and refined to a single recipe. This beer is inspired by the style many refer to as Cascadian Dark Ale or Black IPA, however it is not intended to fit the mold of any particular guideline. Mostly it is big, dark, hoppy, and delicious. The recipe was coined 'Diablo Dark Ale' in honor of our near by Mt. Diablo. Members of the Diablo Order of Zymurical Enthusiasts live in various cities located at the base of this great mountain. Also the location where many of us from MoreBeer! go mountain biking when we get the chance. Left Coast Pale Ale by Phil Montalbano | 5 Gallon Beer Recipe Kit | Extract
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! Enjoy the citrus/orange hop character Amarillo® hops impart on to this thirst-quenching Pale Ale Includes 100% Amarillo® hops Estimated ABV: 5.3% Estimated IBUs: 50-55 Makes 5 gallons of finished beer Phil created this recipe in an effort to stop his long, slow spiral into fruity, phenolic, sour beers that began to populate his fermenters and kegs back in 1998. Honestly, Phil seriously contemplated throwing gummy bears into his brew and realized it was time to step back, look around, sober up, and grab a classic West Coast pale ale. This beer is dominated by the wonderful Amarillo® hop that is known for having a citrus/orange flavor. The Left Coast Pale has been brewed many times over as a house favorite during the Fermentation Frenzy shop era (Los Altos, CA circa 1997-2007). Try it, you'll like it. And, unfortunately, so will your friends. Phil recommends for an even more pronounced hop nose and flavor you add an additional 1oz of Amarillo® hops to the fermenter as a dry hop addition (not included with kit). Makes 5 gallons Estimated Original Gravity: 1.050-55 SRM (Color Range): 12 IBUs: 50-55 Estimated Alcohol Percentage: 5.0-5.5% Our recipe kits DO NOT include grain bags, yeast or priming sugar. Odiferous Brown Holiday Brew by Kyle | 5 Gallon Beer Recipe Kit | Extract
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! This recipe makes a delicious brew with big body, rich malt, and a complex spice blend of All-Spice, Cloves, Nutmeg, Saigon Cinnamon, and Ginger Includes Perle and Northern Brewer hops Estimated ABV: 6.8% Estimated IBUs: 23-27 Makes 5 gallons of finished beer A few years age we had a competition in our Concord showroom for the best Holiday Beer. The winner was an unknown brewer named Kyle Sommers. We actually hired Kyle following the competition to work in our customer service office(see where good homebrew will get you!) In 2010 Kyle graduated from the Siebel Institute to continue his dream of becoming a professional Brewmaster. He is now brewing at Lagunitas We loved the big body, rich malt, and the extremely complex spice blend. When we went to make the recipe for sale we thought twice because we had to buy out the spice section of our local grocer. Spices include small amounts of All-Spice, Cloves, Nutmeg, Saigon Cinnamon, and Ginger. Based on a Northern English style Brown Ale, it has 6 different spices added at two different times in the brewing and fermentation process, resembling and inspired by a Belgian-style winter beer. This winter warmer will make your kitchen smell like Thanksgiving Day at Grandma's house. With some added Belgian brown sugar to counter-balance the spice and add some alcohol content, this is a great way to top off your Holiday adventures by the fireside. If you are a firm believer in the Reinheitsgebot (no spices, sugar, etc.), this is not the beer for you! Kyle suggests using White Labs English Ale yeast, WLP002 Makes 5 gallons Estimated Original Gravity: 1.066-70 SRM (Color Range): 21 IBUs: 23-27 Estimated Alcohol Percentage: 6.8% Our recipe kits DO NOT include grain bags, yeast or priming sugar. Skyscraper Brewing Company Bulldozer Honeyweizen® | 5 Gallon Beer Recipe Kit | Extract
This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Skyscraper Brewing Company A delicious wheat beer with a pleasant honey sweetness Includes Willamette and Saaz hops Estimated ABV: 4.7% Estimated IBUs: 21-26 Makes 5 gallons of finished beer Phil Sutton, owner and head brewer at Skyscraper Brewing Company, was in our local homebrew club, D.O.Z.E. After taking the American Brewers Guild program, he realized brewing was what he wanted to do, and left NorCal to head down south and open up Skyscraper. Phil says, "I started out, like everyone, as a homebrewer. Living in Salt Lake City in 1999, I got sick of paying $13 for a six pack of Sam Adams, and some homebrewer friends got me started with my first batch, a hybrid Bohemian Pilsner that was fantastic! When I got sick of my job writing software, I attended the American Brewers Guild program, worked for BJ's for a year, and then struck out on my own." Most of you have probably already seen the brewery in a certain cellular phone ad, where two guys are trying to sell beer - the guy on the forklift was Phil himself! His Bulldozer Hefe is Phil's flagship beer, and he was kind enough to let us in on the recipe. Next time you are in Southern California, be sure to put Skyscraper on your list of must-visits! Father-In-Law Pilsner by Charlie "Push Eject" Essers | 5 Gallon Beer Recipe Kit | Extract

Sweeter than a standard pilsner, but still crisp and refreshing. Guaranteed to satisfy the in-laws Includes 100% Saaz hops Estimated ABV: 4.3% Estimated IBUs: 35-39 Makes 5 gallons of finished beer Charlie Essers (AKA Push Eject) has been a longtime friend of MoreBeer, The Brewing Network, and homebrewers in general. Dubbed "one of the nicest guys in homebrewing" by those who know him, Push wanted us to have this recipe that he brews whenever his father-in-law comes for a visit. Push says: "My family has been supportive of all the brewing gadgets and scattered projects including my "dark-beer-phobic" father-in-law. This recipe is an Americanized pilsner that I have evolved for him over the years. Sweeter than a standard pilsner, but still crisp and refreshing, I can't keep this around long in the Summer months." Push began brewing in 1999 after buying a starter homebrew kit as a bad joke for a friend who earned a DUI and getting one for himself as well on impulse at the register. After going all grain in 2002, it was clear that automation was a necessity in his process, and his love of brewing gadgets was born. His first stand was designed and built in 2003 and his first Wort-O-Matic control panel in 2006. These led to the launch of wortomatic.com and a close relationship with MoreBeer! and The Brewing Network. Try Push's beer out and let him know what you think - Hopefully it keeps your father-in-law happy, too! Snowflake Smoked Porter by Ray Daniels | 5 Gallon Beer Recipe Kit | Extract
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! This incredibly unique recipe leans on a smoky quality that was once a staple of old-world English porters Includes Northern Brewer and Kent Goldings hops Estimated ABV: 5.4% Estimated IBUs: 28-34 Makes 5 gallons of finished beer This beer combines the richness of black malt with the old-world smokiness of Bamberg: a Franconian village that is at once worldly and yet devoted to its traditional ways. Brewed with an ale yeast, it mimics the origins of English porter, a beer made solely from brown malts dried over a direct wood fire. And since you'll never find a beer like this at your local liquor store, you'll have to brew it to appreciate the flavorful treats it can offer. With an astounding Two Pounds of Rauch Malt, any fan of smoked beers will fall in love with Ray's beer! Ray recommends British Ale yeast, WLP005. Ray began brewing in 1989 after seeing a homebrew store ad at a Chicago hamburger shack. "The first batch was pretty good," he says, "but the second one was awful. Fortunately, I had already brewed the third batch before tasting the second, or that might have been the end of things. After tasting that beer, there was no looking back: I dove headlong into brewing and tasting and learning as much as I could about the art of brewing." That informaton was put together in his book, "Designing Great Beers", which has since become a must-have for any serious brewer. Over the years he has brewed more than 200 batches. When he started all-grain brewing in 1990 there weren't many options for buying mashing equipment, so he made his own 10-gallon vertical Coleman cooler Mashtun. More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment--although now the mash tun has been retired after some unsuccessful modifications a few years back. You may now know Ray as the founder of the highly successful Cicerone Program which certifies and educates beer professionals. Drakes Brewing IPA | 5 Gallon Beer Recipe Kit | Extract

Another brewer that got his start at home - Rodger has been a homebrewer since 1991, and a commercial brewer since 1996. After taking the Eight - week course at Siebel, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002. Since then he has been keeping the awards and praises rolling into Drakes with their flagship IPA, which took Gold in 2002 at the Great American Beer Festival. Drakes Brewing has been around since 1989, and is one of the San Francisco Bay Area's oldest breweries. Their attention to detail and their commitment to making great beer is evident in each batch that rolls out of the brewery. Definitely another 'must' for any beer fan visiting the Bay Area. Until then, find out more about Drake's at www.drinkdrakes.com. One of the best examples of a West Coast IPA that you can find on the market. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! Somehow, the hops aren't too over the top and don't squash the malt as one might think from just looking at the recipe. This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001. Firestone Walker Brewing Company Double Barrel Ale® | 5 Gallon Beer Recipe Kit | Extract
This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Firestone Walker Brewing Company A smooth amber ale with subtle oak notes blending perfectly with wonderful malt character Includes Willamette and Kent Goldings hops Estimated ABV: 5% Estimated IBUs: 32-34 Makes 5 gallons of finished beer Matt Brynildson of Firestone Walker Brewing Co., Paso Robles, California. It seems to some that Matt has almost been bred to brew beer. After getting a degree in chemistry in 1993, Matt went to work in Michigan doing research and development on hops for the brewing industry. In 1995, Matt went to the famous Seibel Institute of Brewing Technology to further his education. After brewing for Goose Island in Chicago and then moving to California to work for SLO Brewing, Matt was appointed Small Brewmaster of the Year in 2001. Later that year, he was asked to join the crew at Firestone Walker. Two years later Matt was dubbed Mid-Sized Brewer of the Year at the Great American Beer Fest AND at the World Cup of Beer, for a total of 12 medals in just three years! Since then, Firestone Walker has been gaining a large following in California due in part to it's flagship beer, Double Barrel Ale, which is produced in a Burton Union system that has the beer fermenting in barrels. Firestone Walker Brewing Company is the only brewery in the U.S. to ferment in barrels and one of only two in the world. In addition to the line-up at Firestone Walker, Matt also brews the Nectar Ales line of beers, as well as a few of the Trader Joe's house brands. Learn more at www.firestonebeer.com Don't let the name fool you, this beer is easy on the oak, having been created so that all ingredients blend perfectly with one another, even the oak. In fact, the oak really takes a back seat to the wonderful malt characteristics that this beer presents, which may be hard to imagine once you realize there are 2 ounces of oak in this one! American base malt, a little Munich, some crystal, and that's it - simple, yet flavorful. Just how we like it. One can easily spend all night drinking this smooth amber ale ... in fact, many of us at MoreBeer! have done just that! The low bitterness ties everything together and makes you remember just how much of a craft brewing beer really is. Hop Mothra IPA by Jim Nielsen | 5 Gallon Beer Recipe Kit | Extract
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! Beautifully pale to medium amber color in the glass with a spicy aroma and flavors of grape fruit and citrus Includes Perle, Cascade, and Liberty hops Estimated ABV: 6.5% Estimated IBUs: 55 Makes 5 gallons of finished beer If you have a monstrous craving for intense hop flavor, you’ll need a beast of equal proportion to do battle. Enter Hop Mothra! This liquid kaiju isn’t interested in saving (or destroying) Tokyo. Her only motive is to slake your thirst and leave you yearning for more – so much so that you’d swim to Infant Island for another taste. With a nice malt backbone (err thorax?) this beast will soar over your tongue and, with a flap of her wings, send a hurricane of hop flavor to assault your taste buds. Jim Nielsen’s Hop Mothra IPA uses 10 lbs of Ultralight Malt Extract, 1 pound of Light DME, and a trio of crystal malts that give this beer a beautiful pale to medium amber color. Perle, Cascade, and Liberty hops lend a spicy aroma with flavors of grape fruit and citrus. Jim began home brewing in 1994, but it wasn’t until the Great American Beer Festival of ‘98 that he came across a beer that would alter the course of his hobby. Grant’s Brewing Company made a batch of beer especially for the festival – Hopzilla! This beer made such an impression on Jim that he decided to take his passion for home brewing to the next level, and he began his search for a brew system that would allow him to do everything the pros can do. He helped MoreBeer! develop one of our first digitally controlled brew sculptures, and not long after he had brewed his own version of Hopzilla that he (unsurprisingly) enjoyed more than the original – HOP MOTHRA! Raise a glass to Jim, and give thanks for this monster of an IPA. Vienna Lager by John Palmer | 5 Gallon Beer Recipe Kit | Extract
Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! A smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops Includes Saaz and Northern Brewer hops Estimated ABV: 5% Estimated IBUs: 32-36 Makes 5 gallons of finished beer Maybe you have heard of John Palmer? His best selling "How to Brew" is the default homebrewing text. John gave us this recipe early on and it has always been a special recipe. John describes his kit as: "a smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops. This interpretation of the Vienna style has more hop flavor dancing around the edges than the current BJCP guidelines specify, but the hop profile really complements the rich malt palate for a lively complexity that you don't get from the hoppier Bohemian Pilsener or maltier Oktoberfest styles, and is richer and smoother than Dortmunder Export." This beer will not disappoint! Thanks, John, for the kit, the book, and the advice! John recommends White Labs WLP833 for a dried beer, and WLP820 for a maltier version. Makes 5 gallons Estimated Original Gravity: 1.049-52 SRM (Color Range: 11 IBUs: 32-36 Estimated Alcohol Percentage: 5% Our recipe kits DO NOT include grain bags, yeast or priming sugar.
