    Of the six noble grapes, Riesling is the lone variety to be of German origin rather than French. Originally from the Rheingau region of Germany, where it is still the most widely cultivated grape today, Riesling is known for its outstanding aromatics and is commonly regarded by wine experts as the finest white grape variety in the world. Mercurial in nature, Riesling is highly “terroir-expressive” and begs to be planted in cooler climates; but even small climatic variances in a characteristically cool growing region can lead to markedly different results in the finished wine. Often noted for having a high acidity and palpable mineral character, Riesling is adored for its floral aroma and mouthwatering orchard flavors of apricot and peach, as well as many other ripe fruit notes that vary depending on the region. To this day, Germany continues to boast the highest production of Riesling in the world, despite the fact that the vines have made their way to countries with far more tremendous growing capacity in terms of sheer acreage. By example, California’s vast collection of vineyards dedicate less than 4,000 acres to Riesling, with nearly half of the total being grown in Monterey. Californian Riesling tends to be softer, with less mineral quality and somewhat more subdued fruit flavors.     From the French word sauvage meaning “wild” we get the name of this green-skinned grape. Aptly named, as vines of Sauvignon Blanc would grow ferociously if they were never inhibited by the business end of a pair of pruning shears. The flavors of the wine are just as unruly, ranging from acutely grassy to joyfully tropical. Grapes grown in cooler climates tend to produce more acidic wines with flavors of grass and green bell peppers with limited tropical or floral notes. Warmer climates can intensify the tropical fruit character as long as the grower is careful to not let the grapes over ripen on the vine. Sauvignon Blanc experiences little to no enhancement from ageing in the bottle and is almost always consumed young. California is the top producer of Sauvignon Blanc in all of North America. Here the wine tends to be more fruit-forward and evoke flavors of citrus and tropical fruit. Another take on the wine was first introduced to California by Rovert Mondavi who began lowering the fruit expression through barrel aging. Both the more classic fruity New World interpretation and Mondavi’s “Fume Blanc” style remain popular as California Sauv Blanc options.     The great-grandchild of Pinot Noir, Shiraz is a dark-skinned grape that produces some notably striking red wines with wide ranging flavors of pepper, game, blackberry, spices, chocolate, and more. Also known as Syrah, some of the most exhilarating varietal examples of this wine are made in its native region of France’s northern Rhone Valley. To this day, it is the region’s primary grape and produces classic wines including Hermitage, Cornas, and Côte-Rôtie. Although Syrah or Shiraz are two names for the same grape, which name you see on the label generally indicates what style the winemaker intended to exemplify. Syrah being the classic interpretation of a powerful, complex wine with high tannin levels, whereas Shiraz is more likely to follow the New World translation, which is less assertively tannic and has more fruity, almost jammy flavors. In California, you’ll easily find both Syrah and Shiraz on the shelf in the wine aisle. The state’s exceptionally diverse regional climates allow vineyards to grow grapes well-suited for either Old World or New World expressions. Generally, cooler climates and more traditional practices produce wines sold as Syrah, which are drier and have a more earthy character. Shiraz, on the other hand, is made in warmer climates with modern techniques, and commonly softer and more fruit-driven.     Perhaps the most ostentatious wine grape in the world, Viognier is known for its intoxicating perfume in the glass and its prudish yield on the vine. The sparse downstream production per acre of plantings can make Viognier a prohibitive prospect for some vineyards, but it is nonetheless revered as one of the finest grapes to come from France. Although some speculate that this grape made its way to Rhone by way of Croatia thanks to the Roman emperor, Probus, in the modern age it is considered to be decisively French and singularly responsible for the famous varietal Condrieu. Often compared to Chardonnay but with more celebrated aromatics of peach, honeysuckle, pear, and gingerbread. Second only to the Rhone Valley, California’s Central Coast is noted for producing exceptional Viognier. A finicky grape, to be sure, but it excels in the warm California sun, which promotes ripeness and ultimately boosts the aromatics of the finished wine. Compared to the French example, it can sometimes be lower in acidity but with more intense fruit character. Our California Viognier bursts with gorgeous aromas of tangerine, peach, and rose.     An essential ingredient in winemaking.   Sodium Metabisulfite, (often referred to as SO2, sulfites meta, or meta-bi) has several uses in winemaking. It is used at the crush, to help control the spoilage bacteria and indigenous yeast that may already be present on the fruit or the equipment. The amount used is enough to stop most of the unwanted organisms but not enough to hinder a cultured yeast, which has a higher tolerance to sulfites. This effectively “wipes the slate clean” for the cultured yeast to step in and rapidly colonize the must.   Sulfites also help to inhibit the enzymatic browning of musts and finished wines. During storage and in the bottle, sulfites at the proper levels will protect a wine by continuing to inhibit spoilage organisms, as well as by scavenging oxygen.   Campden tablets are Sodium Metabisulfite in an easier to measure format. Adds 75 ppm of sulfites at the rate of one tablet per gallon. These must be fully ground-up prior to use. Potassium Meta-bi in powder form, AD495 or AD500, is much easier to use if you have a scale and does not add sodium to your wine.   It is possible the sodium could contribute a very small salty flavor.
