A specialty European yeast selected for its Spicy, somewhat peppery flavor profile. This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below. Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

Stainless Draft Coil
50' x 3/8" coil manufactured in our metal shop. When compared with 5/16" coils that are usually used to make draft boxes, the 3/8" coil holds more beer, cools faster, yet because the resistance is less the beer can be pushed through the lines with less CO2 pressure. Less applied CO2 pressure means the beer does not overcarbonate and foam wildly if a keg is left on tap for longer than an afternoon.
