If using a dosing system, program to dose into the wort during the final stage of the boil. How do I know I am using the right amount? Copper finings are an easy way to make a big improvement in your beer clarity and filterability. To check you are using the right amount you can do two things: Carry out an optimization check (see the optimization video below) this ensures correct additions even if there are raw materials or process changes.   Take a cold wort sample at cast, post heat exchanger and allow it to settle overnight. Cloudy wort indicates you are not adding enough. Bright wort with high sediment levels (over 5%) means you are adding too much – optimize. Why is Compac available in granules, tablets and powder, and which one is right for me? Compac CG™ is a Pure Granular form which means the active ingredients are at the highest concentration and lower dose rates are required to achieve the best results. Compac CG™ Tablets are useful for smaller breweries to allow easy consistent addition without having to measure each time. The tablets are mixed with a dispersant to allow for better mixing. Powder, is for automatic dosing systems. How do I store Compac CG™? Store Compac CG™ in a dry location at room temperature.  What other process aids can I use to complement my brewing process with Compac CG™? With regards to Finings, it is common to combine copper fining use with cellar finings, such as silica sol or isinglass, which are added post fermentation and reduce haze contributed by yeast during fermentation.  What is the difference between kettle finings, copper finings and Irish moss? Kettle and copper finings are the same thing and refer to the addition point which is in the brewhouse on the hot side. Irish moss is another type of kettle fining from the Chrondrus Chrispus species of seaweed. It has a lower concentration of the active ingredient kappa carrageenan than in Euchema cottonii which is used for Compac CG™ . It is therefore less effective at removing the haze forming proteins.

For non-Brewtools tanks, you also may need an adapter and/or tee to connect the spunding valve/pressure sensor assembly. Accessories To complete your FCS kit setup, some accessories are needed. A solenoid for cooling (Ø4.5mm - 34mm or 1.5") with 2-pin LP12 cable and DIN43650 Type A adapter or a submersible pump (comes with cable). A ball clamp and a connecting rod. An airlock for the pressure out solenoid valve is recommended. For smaller tanks we recommend our polycarbonate airlock. No need for elbow if you use tubing as airlock). Remember clamps/gaskets. If you don't have a Brewtools Unitank, we recommend getting a TC 1.5" to 34mm adapter for the spunding setup. Setting Up the FCS for Your Tank Mounting To mount to your tank a ball clamp and a connecting rod are very useful. This will work with most any size or style tank. Solenoid Valve & Related Connection Hardware for Cooling For Brewtools tanks that use 34mm connection you will need a Ø4.5mm - 34mm solenoid valve. For BrewBuilt, Spike, Ss BrewTech, or Commercial tanks you will need a TC 1.5" to 34mm adapter and 1.5" TC Solenoid Valve. Either way, you will need a 2-pin LP12 cable and DIN43650 Type A adapter to connect the solenoid valve to the Brewtools FCS I/O Module. Would You Like a Visible Air Lock on the Spunding Valve? The Brewtools pressure relief solenoid spunding valve releases CO2 at the set point you choose on your controller. To visually see the CO2 release, adding on an airlock for the pressure out solenoid valve is a nice option. For tanks under 300L, we recommend the 34mm polycarbonate airlock that connects to the Brewtools Solenoid Valve. For tanks larger than 300L, you should use a blowoff. For blowoffs, use a TC34mm to 12mm barb and a 10x16mm silicone tube or equivalent ran into a bucket of water. You will also need a 34mm Tri-Clamp and 34mm gasket. Tees and crosses are also available in multiple sizes to give you more ports. For the MiniUni+ For MiniUni+, you need to replace the Mini Spunding Valve with an M24 to TC adapter and a 90-degree 34mm TC elbow to fit your spunding assembly (if you want to use the TC air lock. No need for elbow if you use tubing for a blowoff). You will need the clamps/gaskets to make the connection. The concave base with center drain means you'll be able to extract every last drop of wort to your fermenter. If you've brewed in a traditional flat bottom kettle, this center drain may be a bit perplexing at first. Many brewers are used to whirlpooling after the boil to pull hop matter into the center of the kettle, then transfer out using a pick-up tube that pulls from the kettle wall in order to avoid sucking up the solids. But fear not! One of the key features of the BrewZilla is the false bottom protection screen. This screen avoids the need for doing a whirlpool, filtering wort as it transfers and blocking more than 95% of hops and hot break from getting sucked into the pump. This not only prevents blocked pump issues, it also increases the efficiency of your brewhouse by eliminating kettle loss from wort that may have otherwise been left behind. Ultra Low Watt Density Elements The concave base on the BrewZilla also allowed for larger heating elements with significantly lower watt density than other breweries. When a lot of energy is coming off of a small element, the local temperature near the element can be so high that it scorches the wort and causes caramelization. Lower watt density essentially means you can produce lighter color beers that would otherwise have fallen victim to caramelization effect. It also reduces that chance of boilovers and reduces stress on the elements which extends their life expectancy. Easy Access Built-In Pump The built-in pump allows you to recirculate your wort during the mash for improved efficiency and more even temperature distribution. But it can also be used to transfer your wort from kettle to fermenter rather than relying on a gravity feed, and with the optional CIP Rotar, you can used the pump to clean your BrewZilla (or fermenter) after every use. During your brew day you'll be able to control the pump from the RAPT Controller with a dedicated button for turning the pump on and off. Another feature you'll find on the controller is adjusting the pump flow. This doesn't control the actual volume of the flow (you can do that from the ball valve located on the recirculation arm), but rather cycles the pump on and off automatically based on your setting. At 100%, the pump remains on continuously. But at 80%, the pump will cycle to be on 80% of the time and off 20% of the time. This may not be a feature that every brewer thinks they need, but it's an excellent way to avoid running the pump dry accidentally, as the time the pump is off allows recirculating wort to filter through the grain bed and back into the pump inlet. If you flip over the boiler, you'll find the magnetic drive pump and all the plumbing is right at your fingertips. This means you don't have to disassemble the base in order to access the pump for cleaning or maintenance if required. It also means the plumbing can be changed more easily too. For instance, the unit comes as standard with the plumbing from the pump feeding both the recirculation arm and the transfer valve, but you change this so the tap outlet bypasses the pump if you prefer.
