        Sweet Mead for Blackberry Wine

        Found an awesome recipe for Blackberry wine that called for sweet mead. I was not aware that it should have had an ice pack and should have been refrigerated as the envelope says. That being said I followed the recipe added the mead at room temp and had fermentation start shortly thereafter and still going strong a week later. Obviously it was not a problem.

        How much Wyeast to use per gallon?

        If I remember correctly the pack should be enough to get a good start on up to five gallons. I only used it one time and had no luck getting it to start in the first place. I had to add another yeast to get fermentation started.

        I used this for a 5 gallon batch since it's a liquid pouch it's going to be harder to separate per gallon so maybe try using a dried ale yeast if you want to only do a smaller batch. Half a pack for 1 to 3 gallons full pack for 3 to 5.

        The bag is good for up to 5 gallons of mead if you pitch it in as-is. When I make smaller batches I just eyeball it and put in about 1/4 of the package per gallon.

        Usually one package of wyeast is good for up to 5 gallons of brew at 8% alcohol or less. If you're making a stronger batch than that you will benefit from using 2 packages or growing your yeast prior to brew day by using a yeast starter. This applies to mead beer and cider.

        Batch builder will tell you a good schedule as well. I just laid off the first nutrient addition because of the nutes inside the package.

        I always use the SNA (Staggered Nutrient Addition) schedule. So no yeast nutrients at pitching. Create a mixture of 1 tsp. Fermaid-K & 2 tsp. DAP. Then for a 3-gal batch Day1: Add3/8 tsp. when making the must 3/8 tsp. 24 hours after fermentation begins 3/8 tsp. 48 hours after fermentation begins 3/8 tsp. when 30% of the sugar has been fermented (~1 week)
