    Homebrewers love this commercial English Ale yeast for its big, clean flavor; its rapid fermentation; and its highly flocculant character.

    Widely recommended for practically any American or English style beer, S-04 yeast a rapid starter and finisher which settles out extremely well, leading to a clean finished beer. Great to keep a few packets as back-ups or just to use as a less-expensive alternative to liquid cultures.

    This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.

    Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

    • Sedimentation Time: Fast
    • Alcohol Tolerance: 9-11% ABV
    • Optimum Fermentation Temp: 64-78°F

        Whatever styles you're prone to brewing and yeasts that you usually use every home-brewer should have a packet of S04 and S05 in the fridge. Great in a bind and can work wonders for improvised brew days.

        My go to dry yeast

        To determine which dried yeast I preferred I brewed up 2 batches of the same beer (an ale) and pitched one with this yeast and one with safale-05. I honestly thought I would prefer -05 but the flavor profile of this yeast was better for the 2 people doing the tasting. I use both safale yeast 04 and -05 with direct pitching when I am out of liquid yeast and they work great and have never let me down.

        Great job on English Ales

        This yeast is great for brewing English milds and browns. It provides the character required for those styles. Be sure to follow the rehydration instructions from the Safale S-04 data sheet. (available under the Documents tab)

        I used this yeast to brew 5 gallons of oatmeal stout and WOW! This yeast took off within two hours and was almost to dryness in 24 hours. I have a Speidel 7.9 gallon fermenter and it blew the air lock off. Haven't had a chance to taste the beer yet but I have high hopes. From other reviews I expect a sweet creamy beer.

        Always have this yeast on hand

        Most of my brewing sessions are planned out and the yeast is cultivated days before the brewing session. This is a great alternative for those days you want to brew but did not plan ahead. I have directly pitched two packets of this yeast into the fermenter for a 10 gallon batch and within hours it was chugging away. Clean fermentation is also a benefit using this yeast. The price point also makes this an excellent yeast for culturing up instead of using liquid yeast.

        great product to use and also keep on hand

        i usually get a fairly quick start with white labs after doing a yeast starter. after re-hydrating this packet ( 10 min max) vs a starter with a liquid my beer was up and fermenting within 6 hrs. also used another packet on an emergency yeast failure. and the beer turned out great regardless of the 20+ hr lag time

        Quick English Yeast

        S-04 is a great yeast when you want to produce something quick and in an English style. Ferments fast and drops out clear very quick. Keeping the fermentation tempreature dialed down in the low 60's helps produce a cleaner beer but it'll still have esters and a noticeable English taste.

        One of my favorites

        I use this in a great variety of beers and it has never disappointed me. One of my "go to"'s. More "fruity" than S-05 but not as much as the Cooper's dry yeast. Produces a clear beer. Really accentuates the citrus nature of hops like Citra and Amarillo.
