    The great-grandchild of Pinot Noir, Shiraz is a dark-skinned grape that produces some notably striking red wines with a wide ranging flavors of pepper, game, blackberry, spices, chocolate, and more. Also known as Syrah, some of the most exhilarating varietal examples of this wine are made in its native region of France’s northern Rhone Valley. To this day, it is the region’s primary grape and produces classic wines including Hermitage, Cornas, and Côte-Rôtie. Although Syrah or Shiraz are two names for the same grape, which name you see on the label generally indicates what style the winemaker intended to exemplify. Syrah is the classic interpretation of a powerful, complex wine with high tannin levels, whereas Shiraz is more likely to follow the New World translation, which is less assertively tannic and has more fruity, almost jammy flavors. Syrah was first brought to Australia by British immigrant and viticulturist James Busby. After living in Australia for several years, he traveled to Spain and France to continue his studies and brought back vine clippings when he returned. Here is where the grape was first given the name Shiraz and remains the leading grape in the country. Australian Shiraz tends to be less gamey than its Syrah predecessors, and is known to have spirited flavors and aromas of berry and an almost syrupy mouthfeel. Our Australia Shiraz is decadently full-bodied, displaying deep flavors and aromas of black currant and dark chocolate with a distinct meaty element.     Perfect size for siphoning or bottling from a gallon jug.  Takes 5/16" tubing (see YMAN section below). Instructions: Sanitize and rinse your Auto Siphon. Get the inner tube gasket and the outer tube wet. Attach the curved siphon to a hose. Submerge the end of Auto Siphon into your container. If bottling directly, attach the correct bottle for the tubing you are using and place it inside your bottle wand. Otherwise place the the tubing into the container you're racking to. Pull the inner tube up until the liquid fills the tube. Pump the inner tube down and siphon will begin. Pull out the inner tube and sanitize your Auto Siphon for storage. Our standard 1/2" racking cane tips will work with this product, see our You Might Also Need section below for product information.

    BA11 was selected in 1997 near Estacao Vitivinicola de Barraida in Portugal. It has excellent fermentation kinetics, even at low temperatures. It promotes clean, aromatic, estery characteristics during fermentation. BA11 intensifies mouthfeel and augments lingering flavors in both still and sparkling white wines. BA11 encourages the fresh fruit aromas of orange blossom, pineapple and apricot. In relatively neutral white varieties BA11 brings out tropical fruit, cream, vanilla and spice. With fruit from hot climates, BA11 can really help to "flesh out" a wine by its' volume and mouthfeel enhancement. This strain is good by itself, as well as being a great structural component to a blend. Best results from 50 to 77 degrees F, and alcohol tolerant to 16%. Renowned for respecting fruit, Hungarian barrels offer winemakers a great option to impact the mouthfeel, structure and flavor of wine without stepping on the terroir of your grapes.  Due to the tight grain and slow release of phenolic compounds, you can feel secure storing your wine in Hungarian barrels longer than you can with other barrels. The slow process of micro oxygenation rounds the wine while various compounds in the wood such hemicellulose, lipids, and lignins are slowly integrated.  As most barrel makers know, the best source of wood for wine barrels is the oak grown in the territory of old-time Hungary, known as Slavonian oak. This rare, high-quality oak can be found in the Zemplén Mountains and in the Tokaj oak woods. The specific type of oak in those territories, and what is used in Balazs barrels, is the Quercus Petrea. This oak is characterised by a dense, hard structure combined with extra flavor. Forestry workers look after these forests with considerable expertise, and the forest density ratio in Hungary is 20–24%, with selective logging taking place between November and April. Renowned for respecting fruit, Hungarian barrels offer winemakers a great option to impact the mouthfeel, structure and flavor of wine without stepping on the terroir of your grapes.  Due to the tight grain and slow release of phenolic compounds, you can feel secure storing your wine in Hungarian barrels longer than you can with other barrels. The slow process of micro oxygenation rounds the wine while various compounds in the wood such hemicellulose, lipids, and lignins are slowly integrated.  As most barrel makers know, the best source of wood for wine barrels is the oak grown in the territory of old-time Hungary, known as Slavonian oak. This rare, high-quality oak can be found in the Zemplén Mountains and in the Tokaj oak woods. The specific type of oak in those territories, and what is used in Balazs barrels, is the Quercus Petrea. This oak is characterised by a dense, hard structure combined with extra flavor. Forestry workers look after these forests with considerable expertise, and the forest density ratio in Hungary is 20–24%, with selective logging taking place between November and April. Once the wood is sourced, it is air dried and aged for 24-28 months before cooperage.
