Customers praised this beer yeast for extremely fast fermentation, with many noting activity within 2-8 hours of pitching. "Super viable" with high cell count eliminates starter needs for most brews. Delivers clean, flavorful results in stouts and porters. Some noted higher attenuation than advertised and packaging tab issues.

        Imperial Darkness

Received the Imperial A10 Darkness on November 21st. The manufacturing date was October 25th. Made a yeast starter for an OG of 1.068. October 28th pitched yeast a 2:30 pm by 7:00 pm started seeing action and a krausen starting in the ferminter. Next morning fermintation was going great.

        Very Active Fermentation

Currently being used to ferment an imperial stout with a OH of 1.094 did a very fast job fermenting majority of it was done in the first three days now it’s slowly eating through the remaining sugars.. created a 2L starter with it a day before brew day and it instantly starting working as soon as it was added to the carboy

Love the high cell count. Fermentation takes off within about 2 hours of pitching.

Active fermentation started in 2 hours slowed in 3 days and an occasional bubble at 3 weeks. Hit final gravity at 3 weeks also. This required a blow off tube for the first 4 days also. Worst cleared nicely!

        Excellent

Used a starter. Low fermentation temperature made a very clean and delicious porter.

Great flavor but higher attenuation than specified

Made a 1/2-BBL batch of porter wort @ 1.062 OG.. Divided into three 5-gal fermenters each with a different brand of yeast (Imperial Giga Mangrove). Each yeast chosen was "medium" attenuation with theoretical finish of 1.018 (based on mash temps and attenuation). As predicted one yeast stopped at 1.020 the other at 1.018. But the Imperial went down to 1.009 which would be considered high attenuation. All 3 fermenters were identical side-by-side and same duration in secondary. I would rate 3 stars for the average home brewer but I'll give it a 4 star since the flavor was great and I can compensate for the attenuation factor if I ever use it again.

I pitched this into a dry irish stout that will later have some cold brew coffee added. It went from 1.046 to 1.011 in less than 3 days and dropped clear by day 5 (fermented at 67). Crazy fast fermentation and super clear beer really quickly. I am super impressed and will def use this again!

        Great Fermenter

Used it both for a robust porter and an imperial stout (11% ABV). In the robust porter it had a good fermentation but I used it without a starter. For the imperial stout I bumped it up twice in a starter and it fermented like hell in the primary. (Lost about 0.75 gal of beer from the blowoff being so strong - started with 5.5gal in a 6.5gal carboy) Flavor is generally clean dry with a little English character. Will definitely use again.

I used this on my first oatmeal stout. With no starter this started fermenting within a few hours. I plan to use Imperial on my next brew to avoid the hassle of a starter.

Works very nice for stouts. Use a blowoff if you make a starter. It will blow up.

        FAST & CLEAN

Seriously...Fermentation began (no starter) about 8 hours after I pitched. Very active for 3-4 days and settled out nicely. Used this on a high gravity hoppy imperial porter. nice fit. Used again on an Oatmeal Stout with the same results. -JWF

FAST FAST FAST! Great flavor as well.

Made a Coffee Oatmeal Stout and this yeast did not disappoint at all. Temp: 68 with ramp to 70 after 3 days OG: 1.078 FG: 1.020 (predicted was 1.023) The krausen rose and fell. I almost missed it. Seriously the bulk of fermentation was done in 24 hours after it started. Have not made this same recipe so i cannot compare it to another but i really really like this beer and will be using this yeast a lot more. The ONLY negative is the can. LOVE the idea but execution needs work. This is not the first imperial can i have opened and it isnt the first one that the tab broke off either. Bad design on the opening tab and the aluminum is just too weak. Then you are left trying to figure out what you are going to do now and not infect your yeast with anything (BTW i used a clean sanitized flat head screw driver and it worked ok). That is the only reason for 4 stars. The yeast itself is awesome!

Good flocculation. I had much higher attenuation than what is advertised on IOY's website. Can't comment on taste of the brew yet as it will be conditioning for a few more weeks but samples were quite nice. Mocha espresso imperial stout Ferm temp: 68?F OG: 1.094 FG: 1.009 after 18 days The only reason I'm giving 4/5 stars is because of the poor design of the can packaging. Be sure to sanitize the lid before cracking it open as it will likely come into contact with the yeast. Also do NOT shake the can as you would have with other popular yeast products...

Should I be worried if my yeast pack is swollen?

        MoreWine

if the pack was packaged at sea level and you live at a higher altitude any air trapped in the package will expand. If you had the yeast shipped without an ice pack the yeast likely came to life in transit and are creating carbon dioxide. Put it is the fridge ASAP and use soon! Take care as you open the package to avoid a spraying of the contents all over your work area. If there is no leak in the package you should be good to go.
