Malic acid is the acid found in apples and is therefore the best choice for adjusting ciders.  Malic is less sour than tartaric acid and can also be used to make acid adjustments in Rieslings, Gewurztraminer, and Muscat varieties, though many winemakers still prefer to use tartaric acid in these situations. You would not want to add Malic acid to any wine that will undergo a malolactic fermentation. As a note: only half of the artificially added malic acid will convert to lactic acid during a malolactic fermentation. A rough approximate of weight is 1 tsp = 2.7 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.

Hold upside down for a few seconds to let the sanitizer drain, then move the bottle to a bottle tree or clean area for draining.     20cm x 20cm filter pads made for 20x20 plate filters. Pads rated 0.45 micron remove 99.999% of bacteria. This pad is the right choice when you want to promote sterility in the bottle, although do please note that the pad does not remove 100% of bacteria - only a cartridge filter can do so. The filters can be sterilized by in-line steam, auto-claving, dry heat, hot water or chemical methods. We choose to run Saniclean (CL27) solution through the pads followed by sterile water or a small amount of wine that is then discarded. After the solution is run through the pads, and the pads have softened, the filter will need to be re-tightened. Each pad has an entry side and an exit side, distinguishable by their different textures. The entry side is a billowy type texture, frequently called the "rough" side; and the exit side has a crosshatch pattern and is commonly called the "smooth" side.     The Buon Vino Super filler for winemaking is a gravity fed bottle filler that shuts off automatically when the proper fill height is reached in each bottle. Very easy to use and perfect for small quantities.  A great choice when you want something more sophisticated than the tube style bottle fillers, but don't need to upgrade to a more expensive electric wine bottle filler.  Usage: To use the filler, place the device on top of the bottle to be filled, insert the intake tube into your vessel containing the liquid, and the small overflow tube into an empty bottle. To begin the siphon, start by pressing down on the center plunger on the flow regulator to open the valve.  Suck on the end of the overflow tube until the liquid begins to flow into the bottle. When liquid is flowing into the bottle, put the overflow tube back into the empty bottle. When the liquid reaches the top of the bottle, the valve will shut the flow off automatically.  After the first bottle, check the level of the fill and adjust the level up or down if necessary by moving the rubber bottle seal up or down. Please note that the fill level can be affected by excessive foaming. After one bottle is filled, move the bottle filler to another empty bottle, push down on the plunger lever, and repeat. Comes with 6 ft. of tubing.

    Yeast Hulls are ususally the first action when you have a stuck or sluggish alcoholic or malolactic fermentation. Yeast Hulls are essentially dead yeast cells that absorb auto toxic yeast by-products that could be inhibiting your active yeast or ML culture from doing their job - finishing your fermentation! Yeast Hulls are then typically followed by Pro-Desert in the case of a stuck alcoholic fermentation or Acti Ml in the case of a stuck ML ferment. As a side note, Yeast Hulls are included in the Fermaid K mix of nutrients to help prevent problem ferments from the onset. The reason you would not use Fermaid K for most stuck ferments is that Fermaid K contains DAP. If DAP (Diammonium Phosphate) is added to the ferment past the point of metabolization by the yeast it could potentially leave an unwanted, residual flavor. Use at the rate of .5 to .9 grams per gallon. If stored in a cool, dry place, will last up to 3 years. A rough approximate of weight is 1 tsp = 2 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.

The design was supposed to look exactly like our traditional thiefs we have made locally in Berkeley, California. Thus we used a picture of the original thief in our latest catalog. But alas, when they arrived they looked unlike any wine thief we have seen. But.... they work fantastic so we are happy and we think you will be too! Upon further testing and working with this thief, it has become clear that it can be tempermental about which carboys it fits in. If you'd like a glass thief for a carboy, we have to recommend the MT345. This still works great for barrels, even stacked ones! 1" in diameter, 10" from the bend to the tip and about 14" total length.

VL3 was found to enhance Sauvignon Blanc varietal characters and aromas (Mercaptopentanone, Mercaptohexanol, etc.) Subsequent experimentation has found this to be true of other white varietals such as Riesling, Pinot Gris, and Pinot Blanc as well. VL3 is well suited to aging on the lees and produces very low levels of VA and SO2. A premier yeast for Sauvignon Blanc fermentation worldwide. It is important to note that many of the sought after compounds that are enhanced by VL3 are actually sulfur based, so the use of oxygen and or Cu (copper) will effectively diminish or even remove them from the final wine if used in excess.     A non-soluble clarifier that removes both haze causing polyphenols as well as yeast cells. Mix 2 Tbls (or 5 g) with one cup of sanitized warm water and gently stir into five gallons beer. Let stand for a few days and rack off. Polyclar VT is a coarser grade of PVPP (140 micron particle size), optimized for addition to vessels, where faster settling is required. The larger particle size also facilitates settling of the stabilizer, allowing the majority of the product to be left behind with the lees at racking. A typical contact time of between 3 to 10 days is required, although there are no adverse effects from leaving Polyclar in contact with the wine for longer periods. For wine use .5 to 2.5 grams per gallon depending upon severity of problem and desired affect. A rough approximate of weight is 1 tsp = 1.1 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.

    Cleaning balls are super handy for scrubbing the inside of your transfer tubing. Simply insert into the end of the suction-side tubing connected to your pump and turn the pump on. Be careful not to draw the ball in to the pump head. For the outlet side of the pump, disconnect the tubing from the pump, insert the ball, reattach and turn on the pump. for best results repeat several times on each side. If stains persist, fill your lines with a warm PBW solution and let sit for about an hour before scrubbing again. Available in sizes for 1/2", 1", 1.5" and 2.5" inner diameter tubing.
