What makes this filter really unique is the PES layer membrane with defined .45 micron hole size. This layer will not allow material to pass that is over .45 in size. This PES layer is also what makes this cartridge considerably more expensive than spun poly filters. Some cartridage filters are listed as being absolute but unless they have a PES layer they aren't. Wine to be filtered should already be very clear as this filter will load up quickly with material. It is a common practice to prefilter already settled wine with a 1 micron spun poly filter and then filter with this .45 micron absolute filter. BIG RED is ideal for producing big, complex red wines with lasting fruit. Depending on the grape varietal used it can emphasize complex berry fruit and spice flavors. This strain is very efficient at breaking down and extracting tannins and anthocyanins from grape skin walls, making wines with dark inky color and a tannin profile suitable for extended aging. BIG RED also produces a great mouthfeel due to the significant production of polysaccharides and glycerol. It is also tolerant to higher alcohol levels making it ideal for those grapes that need to stay on the vine just a little longer to get full phenolic ripes with smooth tannin profiles. So lets recap... emphasizes berry fruit with many varietals, produces dark color, extracts a full array of tannins suitable for extended aging, makes wines with great mouthfeel, and is resistant to higher alcohols. Is there a catch? No, but to get all that done BIG RED does love nutrients and you will need to feed it and pay attention to it during fermenation. This is a strain where you would ideally know your Free Available Nitrogen levels that you could base a nutrient schedule around. Absent those numbers or a history with the grapes you are fermentiing, we would suggest you start with hydrating with Fermstart, feeding with FermFed DAP free at the onset of fermentation and feeding again with regular Fermfed after 1/3 sugar depletion. BIG RED is a very low producer of H2S when nutrient demands are met. The perfect strain if you want to make amazing reds. Not the perfect strain if you have a vacation planned during the middle of fermentation and are going to ask your neighbor to punch down...we hear it all!. Because this strain respects varietal character it can be used for a broad spectrum of red grape varietals. MoreWine!® Barrel Washer
Our new barrel washer is a back saver. We've done the He-Man thing and lifted barrels all over the place. As a result we've also been laid up in bed with a screaming lower back. Designed to be used with standard hose pressure. Not intended for use with pressure washers. After using designs that require you to lift barrels onto them we knew there had to be a better way. We designed our own simple washer that is inexpensive and flexible. This is one of the benefits of having a test winery and a fabrication shop! With this design you can wash barrels via two methods. Method 1: Wash barrels while they are on the rack. Spin them when they are empty and insert this wand through the bung hole. Method 2: If you move barrels not on racks, roll the barrel till the bung hole is parallel to the ground and insert the spray wand. Continue to rotate the barrel, with wand inside, till you cannot go any further. The bung hole will now be pointed almost directly down. To keep the barrel from rolling place a chalk block (any block will work) on the other side to keep the barrel in place. The photo shows the angle the washer would be at if used in method 2. Because the bung hole in the barrel is not facing directly down all you need to do when you pull the washer out is to rotate the barrel down for 2 seconds and the small remaining amount of water(less than a pint) will drain out. The perfect fermenter for fermenting wine kits and sometimes preferred for beer fermentations because of its larger volume. This is a 7.9 gallon plastic fermenter complete with lid, airlock, and spigot. The rotating spigot allows you to push the bucket deeper into your counter or benchtop without obstruction. When it's time to transfer out, bring the bucket to the edge of your counter and rotate the spigot to point down. These buckets are made from Polypropylene. Why Polypropylene? These buckets are made from polypropylene as it is less porous and significantly smoother than other HDPE fermenters. HDPE is porous and can harbor microbial activity making it more difficult to clean and sanitize. Being less porous, polypropylene also does not absorb aroma like HDPE so there is less flavor carry over from batch to batch. Kit Includes: 7.9 gallon plastic bucket Plastic lid with hole and grommet Airlock Spigot Please note: The spigot hole comes pre-molded into the bucket and needs to be drilled out before installing the spigot. Kupzit® is an innovative copper citrate preparation developed for the elimination of sulfide off-flavors, particularly hydrogen sulfide odors in wine and fruit wine. Kupzit® contains 2 % copper citrate. For easy dosage and handling, it is coated onto a mineral carrier material, a particularly pure, high-quality granulated bentonite. Kupzit® reacts within minutes with sulphur compounds such as hydrogen sulfide and mercaptans. These compounds bind with Kupzit and then settle out to the bottom. Filter Sheets - 20 cm x 20 cm (0.8 Micron)
20cm x 20cm filter pads made for 20x20 plate filters. 0.8 micron pads are for ultra-fine polishing of the wine, or for preparing hard to filter wines to go through a sterile cartridge filter. Please note that all pad filters are rated 'nominal', meaning that about 90-95% of all particulate matter at the micron rating will be filtered out. There will always be a little bit of smaller material that is also filtered out, as well as some larger material that will make it through. The filters can be sterilized by in-line steam, auto-claving, dry heat, hot water or chemical methods. We choose to run Saniclean (CL27) solution through the pads followed by sterile water or a small amount of wine that is then discarded. After the solution is run through the pads, and the pads have softened, the filter will need to be re-tightened. Each pad has an entry side and an exit side, distinguishable by their different textures. The entry side is a billowy type texture, frequently called the "rough" side; and the exit side has a crosshatch pattern and is commonly called the "smooth" side. The FermWrap™ Heater | Fermentation Heater | 40 watts | 115V
Keep your yeast or ML happy and your ferment warm during those cold winter months with this flexible heater made by Fermentap. Using tape to adhere, this flexible heating wrap can be attached directly to your fermenter or can be used to heat the space in a box (or refrigerator) that the fermenter is in. Depending on your configuration and insulation, you can increase the temperature of your wine from 5-20 degrees Fahrenheit. If using carboy or bucket you can attach directly using tape (as seen in photo above.) We recommend electrical tape as it sticks and unsticks the easiest. Heating can be contolled by sticking either the entire wrap or a portion of the wrap to the fermenter. In an open evironment we see a heating differential between carboy and ambient of 10-15 degrees. This differential can be increased by using our carboy bag to insulate a carboy (this has been tested.) To decrease the temperature differential, stick only a portion of the heating wrap to the fermenter. For precise results, we recommend using our temp controller (FE610) and carboy thermowell (FE612) for the ultimate in fermentation temperature contol. For heating small stainless variable volume fermenters and barrels up to 30 gallons a single FermWrap! works great. For volumes of 60 gallons or more, we recommend using two or more FermWraps (we do this in our winery Olin Wines all the time!). Gelatin Clarifier (Grade 1)
A heat soluble, commercial quallity extra no. 1 grade, powered Gelaitin. This is much higher quality Gelatin than you will find in most beer/winemaking shops. It is composed of high molecular weight mass proteins that carry a big positive charge. Prepare by mixing in warm water and then adding during a transfer or pump-over. The solution must be maintained at 95-104F (35-40C) when used. See below for different dosage rates for beer and wine. For Wine Gelatin will help to reduce cloudiness by removing colloidal substances. It has an overall tannin polishing effect, but still preserves the phenolic compounds responsible for structure (similar to fining with egg whites). Add at the rate of .2 to .35 grams per gallon. Maximum clarification and filter-ability achieved after one week. If you will be ageing the the wine, a second racking one week after the first racking is recommended. Do not leave gelatins in wine more than 30 days.
